For an extra traditional finish, the koeksisters can also be rolled in desiccated coconut after dipping.

Method
1. Mix the dough
Add the Dough Pro Koeksister Mix, dry yeast and water into a mixing bowl.
Mix on slow speed for approximately 3 minutes, or until the ingredients begin to come together.
2. Develop the dough
Stop the mixer and scrape down the sides of the bowl to make sure all the dry mix is fully incorporated.
Mix again on second speed for 10–12 minutes, or until the dough is smooth and well-developed.
3. Portion and shape
Remove the dough from the mixing bowl and place it onto a lightly floured surface.
Cut the dough into approximately 70 g pieces.
Roll each piece gently, then plait into a traditional koeksister shape.
4. Prepare for frying
Place the shaped koeksisters onto a greased or lightly oiled baking tray. This helps prevent the dough from sticking when lifting them for frying.
Allow the shaped dough to rest slightly while preparing your oil and syrup.
5. Make the syrup
Add sugar, water and vanilla essence into a pot.
Boil on the stove until the sugar has dissolved and the syrup starts to thicken slightly.
Keep the syrup ready in a pot or bowl for dipping after frying.
6. Fry until golden
Heat oil in a suitable pot.
Carefully fry the koeksisters until golden brown and cooked through.
Remove from the oil and allow excess oil to drain briefly.
7. Dip and finish
Dip the warm koeksisters into the prepared syrup until well coated.
For extra flavour and texture, roll the syrup-coated koeksisters in desiccated coconut.
Allow to cool slightly before serving.
